Pet-nat as clean as it comes - beautiful notes of fresh citrus, lemon sherbet, with a hint of savoury herbs (bayleaf? thyme?) and a beautiful, fine mousse.
Fermented in stainless steel with wild vineyard yeast, the wine was bottled under crown seal to finish ferment, resulting in the Petillant Naturel, lightly sparkling style.
