There are few winemakers who have made as big of a splash in recent years than the dynamic Milan Nestarec. Hailing from Czech Republic, and producing unapologetically rambunctious wines in a natural style, we have watched these simply get better and better in quality.
This is his Pet-Nat, made from Neuberger, Muller-Thurgau and Muscat, which are fermented together in tank and then for a second time in bottle (to create the fizz). After a short time on the yeast lees, those lees are disgorged, leaving an *almost* clear, perfectly fizzy and superbly crushable drink.
