Vermentino always reminds me of the ocean - there is always this oily, briny note that accentuates the fresh lemons and limes that form the backbone of the wine. This one, from the team at Delinquente, is a perfect example - leaning into that richness just enough to create something intriguing without sacrificing crushability.
I try to avoid food and wine pairings in these descriptions as they are pretty cliche, but I wouldn't mind have a dozen raw oysters or a plate of prawns right now with this. So - drink ice-cold, on a beach, in the sunshine, within arms reach of fresh seafood.
